Filled Muffins - A Yummy Breakfast Addition

Yesterday morning I was searching for a new twist on breakfast so I pulled down my "Breakfast & Brunches" cookbook published by Company's Coming.



This has been a great addition to my cookbook library and I have used many of its recipes. And as every cook dreams, each recipe that I've chosen from this book has always turned out great.

After looking through the index, it didn't take long to discover these delicious filled muffins. Alas, I only had these two morsels left to photograph - they disappeared so fast!



Here's the recipe: Filled Muffins

1 egg
3 tbsp. granulated sugar
1/4 cup cooking oil
1 cup milk

2 cups all-purpose flour

1 tbsp. baking powder
1/2 tsp. salt

6 tbsp. cream cheese, shaped into 1 tbsp. balls
6 tsp. raspberry, blackberry or strawberry jam

Beat egg, sugar and oil together in a small bowl until blended. Add milk. Mix.

Measure flour, baking powder and salt into large bowl. Stir. Make a well. Pour milk mixture into well. Stir just to moisten. Divide 1/2 batter among 12 greased medium muffin cups.

Place cream cheese balls on top in center of 6. Drop 1 tsp. jam in center of other 6. Divide remaining batter over top of all 12. Bake in 400F oven for 15-20 minutes until browned and wooden pick inserted in center comes out clean. Let stand for 5 minutes before removing from pan. Makes 12 muffins.

The ones with jam were my favorite, but I really did enjoy them both. I think they would be great with cheddar cheese or an herb spread hidden in the middle as well.

hmmmm, I have all the ingredients you list. Maybe these are in my future.

I'll try making them tomorrow. I wonder if they'll work with the pre-made yellowish sweet pie filling, I bought some recently and maybe will make a couple of muffins with that, we'll see how it comes out. But the cheeses sound wonderful, jam too, ... I looove muffins :) Thanks for the recipe!

what about a chocolate or white chocolate filling? Did I already mention I'll be making these?

Thanks for your comments - these are yummy. I made them for our church group on Sunday and the ladies were pretty much demanding the recipe!! It was a huge success. I'm so glad others have taken the time to develop these great recipes! It makes my life so much easier.
