Years ago my mother sent me some recipes that she had created on her computer. Included in that collection was this extra-ordinary cheesecake.
For example, we were hosting some friends from Buffalo, NY about 3 years ago and I served them this delicious cheesecake. When the last piece had been served, one of the gentlemen inquired just how much it cost to make this dessert. When I told him, he began to dig into his wallet and asked if I would buy the ingredients to make another for the next day. How could I say no?
So, to my friends, I share this delightful dessert with you. Please don't be afraid to try it. You'll never regret it!
Sour Cream Cheesecake
Crust:
1-2/3 cups graham cracker crumbs
1/4 cup sugar
1/3 cup butter or margarine
Cake:
3 pkg 8 oz. cream cheese
1 egg
1 cup sugar
1 teaspoon vanilla
1 teaspoon lemon juice
½ cup sugar
1 large sour cream
1 tablespoon vanilla
Melt butter in a small saucepan. Mix graham cracker crumbs and sugar together and add to melted butter. Press crumbs into bottom of springform pan.
Combine cream cheese, egg, 1 cup sugar, 1 tsp. vanilla, lemon juice and beat till creamy. Pour carefully into cake pan. Bake 25 minutes in 350F degree oven. Cool 10 min.
While cooling, blend together sour cream, ½ cup sugar and 1 tbsp. vanilla. Pour very gently on top of cake. Bake an additional 5-6 minutes. Let cool. Refrigerate 24 hours before serving (or until completely set.)
