A Bountiful Harvest & Giveaway

This doesn't look like very much, but wait..........

Isn't this beautiful?!!!

I was so thrilled at the results of my first year of serious tomato gardening. I harvested three of these baskets from just 7 tomato plants. I know that may not be serious to some of you but this is a BIG step up from patio cherry tomatoes. I actually had to get out the garden hose to do some watering you know.

But now I need your help....ideas on what to do with all these beauties.

Please send me your tips on the best way to use these delicious tomatoes (hurry before they spoil). I'm especially interested in salsa recipes but anything will do.

Next Wednesday I'll be randomly selecting a name from all the entries and the winner will receive a copy of our church ladies' cookbook entitled....

This authentically Canadian cookbook contains over 100 recipes from soup to nuts. So pass the word along and if you post my giveaway on your blog your name will be entered twice.

Looking forward to hearing from you,

Jessica

That's a bunch nice toms there! Those green toms would make some mean green salsa, very good! And nothing can compare to homemade ketchup if you'd like to turn those toms into something different than sauce. Or you can just freeze them for winter soups and stews? Let us know what you do and the cookbook looks inviting, thanks for the chance to win it!

Wow those are beautiful Jessica! What a bumper crop! I have a lady who has kept me supplied in tomatoes this year. Sadly it was after the fact that I found a great tomato relish recipe to use them for. It looks yummy and I plan on using it next year. I think this would be good on top of meatloaf and all sorts of things.

TOMATO RELISH

5 lbs tomatoes, ground
3 red onions
2 hot peppers
3 med bell peppers
2 red peppers
3 cups vinegar
3 Tblsp salt
2 cups sugar

Cook slow until thick. Put in hot jars. Hot bath for 15 minutes.

Hey, I'm having a 100th post give away over on my blog. Come on over and toss your hat in the ring!

What beautiful tomatoes. And the tomato relish in starr's comment sounds great. I love gardening but didn't get to do any this year. Maybe next year. Blessings from Costa Rica
