One Of The Simple Joys of Summer!

Yesterday I harvested my second batch of rhubarb from my garden and I couldn't wait to see it transformed into this!

STRAWBERRY RHUBARB PIE!
MMMMMMMMMMMmmmmmmmmmmmmmmmm!

Recipe for a 10" Strawberry Rhubarb Pie
Pastry for 2 crust pie
4 lbs strawberries, cut in halves
3 cups rhubarb, choppped in one inch pieces
1 1/2 cups sugar

Pre-heat oven to 450.
Place berries, rhubarb and sugar in a bowl and mix together.
Prepare bottom pie crust.
Pour fruit mixture into pie crust.

Roll out pastry for top crust and cut into strips with a knife.
Place strips of pastry across the top, weaving if you like.
Trim crust and seal the edges.

Place pie in oven and bake for 10 minutes.
Reduce oven temperature to 350 and bake for an additional
40-45 minutes or until fruit is tender.

Remove pie from oven and let cool.
Serve slightly warm with vanilla ice cream.
