Recipe Swap

I was out doing some visiting with a new friend and shopping today and when I arrived back home it was beginning to snow. So as I slipped on my warm and cozy slippers I thought I'd turn on the oven and bake up a few treats. I like to have a few things on hand, whether it's just for the two of us or sometimes I have an unexpected caller.

While the treats were baking I stopped by my bloggy friend Karyn at
Karyn's Corner and she clued me in to a recipe swap that is happening today. You can check out all the recipes at I Have To Say...

I couldn't resist picking up the camera and snapping off a few pictures of our treats. They're called Chocolate Almond Biscotti and they are delicious! It's an easy recipe that's sure to satisfy those chocolate cravings!


CHOCOLATE ALMOND BISCOTTI
1/2 cup butter, softened
1 1/4 cup sugar
2 eggs
1 tsp almond extract
2 1/4 cup flour
1/4 cup cocoa powder
1 tsp baking powder
1/4 tsp salt
1 cup sliced almonds
1 cup chocolate chips
1 tbsp shortening

PREPARATION:
Preheat oven to 350F. In a mixing bowl, beat together butter and sugar until smooth. Add eggs and almond extract, beat again until smooth.


In another bowl, sift together flour, cocoa, baking powder and salt. Blend into butter mixture until smooth. Stir almonds into dough.

Divide dough in half and shape (roll) into 2 logs about 11 inches long. I press down the tops a little to flatten.

Place on greased cookie sheet and bake for 30 minutes. Remove from oven and cool for about 10 minutes. Use a serrated knife to make 1/2 inch slices. Place slices (on their sides) back on sheet, and bake for another 6 minutes. Flip slices over and bake for 6 minutes more. Remove from oven and cool on wire rack.


Make chocolate glaze: Mix chocolate chips and shortening in a microwave-safe bowl. Heat for 1 minute on high in the microwave. Stir until mixed and smooth. Drizzel glaze over biscotti.

If I had almonds in the house, I'd go bake these right now! I love biscotti, but have never made it. Your recipe looks simple enough, and the biscotti in your pictures is making my mouth water. ;-)
